From the Chef

Get the most from your time in the mountains by inviting me to your home to prepare delicious, healthy meals that will nourish your body and dazzle your taste buds.  My unique background that combines professional cooking experience with a deep understanding of nutrition enables me to develop meals that are full flavored and filled with the nutrients your body needs to perform at its optimal level.

My culinary inspiration comes from ethnic cuisines that are delicious and naturally healthy. As with many ethnic cuisines my meals are loaded with fresh fruits and vegetables, lean meats, whole grains and legumes. Instead of relying on fat, sugar and salt for flavor, my dishes emphasize the use of natural flavorings such as spices, chili peppers and fresh herbs, as well as  good culinary technique. 

Another unique feature of the services I offer is emphasizing menu development that will accommodate your children’s tastes.   I want to make sure that your entire family enjoys the meals that I prepare in your home.  

The beautiful mountains of Colorado provide so many opportunities to be active and adventurous.  Whether you’re skiing or snowboarding, hiking or mountain biking, your body needs the right foods to fuel your adventures.  I look forward to coming to your home to prepare delicious meals and help you get the most out of your time in the high country!

Bio of Chef Bill Idell

My love of food started when I was very young, helping my mom cook dinner with produce from our backyard garden.  My first professional cooking job was in high school and I was hooked immediately!   I went on to cook in professional kitchens throughout the country, eventually earning the position as a Chef.  I have run the kitchen in several upscale restaurants, including the James Beard award winning Cafe Pasqual’s in Sante Fe, NM.

My passion for food and my interest in understanding the important role it has in our lives drove me to pursue an undergraduate and graduate degree in nutrition.

 I went on to teach culinary lab classes in the Culinary Nutrition program at  Johnson & Wales University, developing original curriculum that used authentic ethnic cuisines from around the world as a model for healthy eating.

I moved to the Vail valley to live in the mountains and lead the healthy lifestyle that I had taught my students about over the years.  I spend as much time as possible mountain biking, hiking, snowboarding and of course, cooking delicious, healthy food.

I look forward to coming to your home to share what I have learned about full flavored, healthy food throughout my career with you and your family!
