​Get the most from your time in the mountains by inviting me to your home to prepare delicious, healthy meals that will nourish your body and dazzle your taste buds. My unique background that combines professional cooking experience with a deep understanding of nutrition enables me to develop meals that are full flavored and filled with the nutrients your body needs to perform at its optimal level.
My culinary inspiration comes from ethnic cuisines that are delicious and naturally healthy. As with many ethnic cuisines my meals are loaded with fresh fruits and vegetables, lean meats, whole grains and legumes. Instead of relying on fat, sugar and salt for flavor, my dishes emphasize the use of natural flavorings such as spices, chili peppers and fresh herbs, as well as good culinary technique.
I view my cooking style as more upscale casual and less fine dining. You will find my dishes and flavors to be accessible and familiar but also creative and original. My personal chef service is less of a one-off special event company and more of a regular home cooked meal service.
Another unique feature of the services I offer is emphasizing menu development that will accommodate your children’s tastes. I want to make sure that your entire family enjoys the meals that I prepare in your home.
The beautiful mountains of Colorado provide so many opportunities to be active and adventurous. Whether you’re skiing or snowboarding, hiking or mountain biking, your body needs the right foods to fuel your adventures. Bio of Chef Bill Idell
My love of food started when I was very young, helping my mom cook dinner with produce from our backyard garden. I have always been a foodie and have spent my life not just cooking but also studying and eventually teaching the importance that good, fresh food has in our lives.
My first cooking job was in high school at a large in-house catering company in my hometown in New Jersey. I was hooked instantly, and from there attended culinary school. I went on to cook in professional kitchens, eventually earning the position as a chef in restaurants throughout the country, learning about a wide variety of cuisines.
One of my biggest sources of inspiration in the kitchen came while working at the famed Cafe Pasqual's in Santa Fe, New Mexico. It was there that I learned about the vital importance of sourcing the highest quality and freshest ingredients.
My passion for food and my interest in understanding the important role it has in our lives drove me to pursue a bachelor's degree in Nutrition Science and a master's degree in Nutrition Communications.
I had the opportunity to put everything I had learned about food into my job working as the Nutrition Director for a middle school grades 4th through 8th . I utilized after school cooking classes and schoolwide tasting buffets from cuisines around the world to teach my students about the importance of eating fresh, delicious food. The success of this program led me to give presentations on its effectiveness at the US Department of Education in Washington, DC and at a conference on inspired school lunch programs in Challans, France.
I went on to teach culinary lab classes in the Culinary Nutrition program at Johnson & Wales University, developing original curriculum, that again, used authentic ethnic cuisines from around the world as a model for healthy eating.
I moved to the Vail valley to live in the mountains and lead the healthy lifestyle that I had taught my students about over the years. I spend as much time as possible mountain biking, hiking and snowboarding (I have both an Epic and Ikon pass!!!) and cooking delicious, healthy food.
